Water supply, waste and equipment

If you're running a mobile catering unit, you must make sure that you dispose of any waste products properly.

Bins should have:

  • tight-fitting lids 
  • disposable liners

There should also be a bin outside for litter.

Do not empty your washing up water onto the ground outside. You must empty it into a rainwater drain or road gully.

Equipment must be:

  • kept clean
  • good condition
  • made of plastic rather than wood
  • heat resistant if it is next to a cooker

Your water supply should be:

  • of good quality
  • hot and cold for both hands and equipment.
  • connected to a sink and basin

At least five gallons of cold water and 3 gallons of hot water should be available.

Water storage containers should be cleaned properly before they are filled.
